Quinoa and Broccoli Patty Bites (egg-free)

Having a bunch of broccoli florets on hand, I was looking for something new make. I had used the broccoli stems in my juicer, had already made steamed broccoli a few nights in a row, and just wanted to try serving up a new, yummy, and healthy dish!

After rummaging through the pantry, I decided to see what I could do with quinoa and broccoli. Of course, I turned right to Pinterest, typed those ingredients in the search bar & VOILA, a plethora of recipes! I spent a little time perusing those, took the parts I liked, & came up with these Quinoa and Broccoli Patty Bites!

You know me, everything has to be EASY, so these definitely follow suit. It’s about the same as mixing up a hamburger mixture, forming the patties, and cooking.

Most recipes I found for something similar wanted you to fry them in oil. I tried that for our 1st two batches, but found them too greasy for my liking, even after letting them sit on a paper towel to absorb some of the oil.

The next two batches I tried were baked in the oven and they were PERFECT!

Either way, baked or fried, they had a yummy, crunchy texture, and I found the smaller I made them the better we liked them. At first, I started off trying the patty-sized (like a burger), and ate them with a fork, but when I reduced them down to a large-coin size they were perfect for dipping & popping in your mouth…a great side dish, appetizer, or snack!
Since Quinoa is now considered a “SUPERFOOD”, it’s worth finding ways to work it into your diet. Our grocery store sells it for about $9 for 12 ounces. This 4 pound bag is a great deal and I will purchase it this way next time:

6 Tablespoons water
2 Tablesppons flaxseed meal
2 eggs

1 cup quinoa
2 cups water
3 cups broccoli florets, steamed
3 slices whole wheat bread, crumbled into breadcrumbs
1 cup shredded cheese
salt and pepper 
fresh basil, chopped (or your choice of seasonings…Tastefully Simple lovers, add 1 Tablespoon of Onion Onion or Garlic Garlic, or for extra spice add Fiesta Party Dip Mix

*For EGG-FREE recipe, combine flaxseed meal and 2 tablespoons of water in a small bowl and set aside. (If you can eat eggs, you can skip this and just use 2 eggs instead.)

*Prepare 1 cup of quinoa with 2 cups of water as stated on the package, let cool.

*Steam 3 cups of broccoli florets, chop into small bits, let cool. 

*Preheat oven to 400 degrees (if baking). In a large bowl, combine cooked and cooled quinoa, steamed broccoli, bread crumbs, shredded cheese, salt and pepper, and basil or seasonings of your choice. Add flaxseed or eggs and combine well. Form by the heaping teaspoons into flat patty shapes. 

*IF BAKING: place patties on a baking sheet lined with parchment paper, and bake 15 minutes at 400 degrees. Turn, and bake an additional 15 minutes until brown. 

*IF FRYING: place patties in a skillet with olive oil & cook over medium-high heat for about 6-8 minutes per side, until brown. 

Serve alone or with your favorite dip (try TS’s Spinach & Herb Dip!)…ENJOY!
