Pumpkin Chai Cheesecakes


As we all know, IT’S PUMPKIN SEASON!!! Time for all things pumpkin-y and delicious!

Last week, I made Pumpkin Snickerdoodles, and they were a HUGE HIT, so this week I decided to continue the pumpkin fun with Pumpkin Chai Cheesecakes!Pumpkin Chai Cheesecakes 1My mom and I hosted a Freezer Meal Prep Party this week, and we decided to have a few easy snacks on hand. Just mix the pumpkin, cream cheese, and Vanilla Bean Chai in a bowl, and then fill a tray with mini baking cups and place a Twisty Graham in each one.Pumpkin Chai Cheesecakes. A simply and delicious fall party recipe! #FoodandHappinessI was running short on foil baking liners, so I decided to try something else, and so I took all of the whole Twisty Grahams out of the bag, and then added the broken pieces (after crushing them) to the remaining pumpkin mixture. 

Ok, so YES, I ate a bunch along the way, too!

I then took that mixture and put a spoonful on a Twisty, and topped it with a second Twisty!Pumpkin Chai Cheesecakes. A simply and delicious fall party recipe! #FoodandHappiness

Pumpkin Chai Cheesecakes

All the flavors of fall in a bite-sized cheesecake!
Ingredients
  • 1 can of pumpkin
  • 8 oz cream cheese, softened
  • 6 Tablespoons Tastefully Simple's Vanilla Bean Chai mix
  • 1 bag Tastefully Simple's Twisty Grahams
  • candy corn
Instructions
  1. Combine pumpkin, cream cheese, and Chai mix in a bowl until well blended.
  2. Place Twisty Grahams in bottom of mini foil baking cups.
  3. Place a teaspoon of pumpkin mixture on each Twisty Graham.
  4. Top with Candy Corn.
  5. Refrigerate for 2 hours, and ENJOY!

I served these at our Freezer Meal Prep Party, to Chase & Josh here at home, and also the next night at a Team outing where went to paint wine glasses.
