As we all know, IT’S PUMPKIN SEASON!!! Time for all things pumpkin-y and delicious!
Last week, I made Pumpkin Snickerdoodles, and they were a HUGE HIT, so this week I decided to continue the pumpkin fun with Pumpkin Chai Cheesecakes! My mom and I hosted a Freezer Meal Prep Party this week, and we decided to have a few easy snacks on hand. She was in charge of something savory, and I was to provide something sweet.I wanted to make something that I could make ahead, that I didn’t have to bake, and that would be a BIG HIT!It doesn’t get much simpler than this! Just mix the pumpkin, cream cheese, and Vanilla Bean Chai in a bowl, and then fill a tray with mini baking cups and place a Twisty Graham in each one.Put a dollop of the pumpkin mixture on each Twisty Graham…And top with what could be called the “Official Candy of Fall”, a candy corn!I was running short on foil baking liners, so I decided to try something else, and so I took all of the whole Twisty Grahams out of the bag, and then added the broken pieces (after crushing them) to the remaining pumpkin mixture.
Ok, so YES, I ate a bunch along the way, too!

They got rave reviews from EVERYONE who tried them!
