Frozen Yogurt on a hot June day! A perfect treat!!!
Yesterday was my niece Cheyenne’s graduation party. Watching our kids and now our nieces and nephews make their way through high school is an exciting time 🙂
Her party was thrown at my sister’s house, and she had everything so well planned out, so of course when we asked if we could bring anything we were politely told, “No thanks!” But, as any foodie knows, it’s hard to show up anywhere empty handed, so I felt the need to whip something up!
After a day of computer work, conference calls, and just pulling myself together, I was naturally short on time & had no real plan in place. So, I took an assessment of what I had on hand and decided to throw together these Frozen Yogurt Rhubarb Strawberry Bites!
Four ingredients is my kind of recipe! Now, I know you’re wondering, “Do I HAVE to use Tastefully Simple Rhubarb Strawberry Fruit Spread?” The answer is no, use whatever jelly/jam/fruit spread you want, BUT if you want them to be SIMPLY-FANTASTICAL-AMAZINGLY-FLAVORFUL, then YES, use the TS Rhubarb Strawberry Fruit Spread!
It took me about 5 minutes to get these assembled, which was a good thing, because the family was getting anxious to get out the door and get to the party!
I found that the “mini” cupcake papers were just the right size to make a “poppable” bite!
I had red, white, and blue sprinkles on hand in anticipation of making a Fourth of July treat. If I had *planned * to make these I would have selected Cheyenne’s school’s colors to decorate them, but it looked cute none-the-less!

These were enjoyed by both the kids & adults, and at just about 20 CALORIES EACH, I’d say they are worth keeping on hand in your freezer for anytime you need a cold, sweet treat!
RECIPE for FROZEN YOGURT RHUBARB STRAWBERRY BITES
- 1 bag of pretzels (I used Snyder’s Snaps)
- 1 32 oz container Dannon All Natural Vanilla Yogurt
- 1 jar Tastefully Simple Rhubarb Strawberry Fruit Spread (you will only use about 1/4 of it and you can find it HERE)
Line a baking tray or cake pan with mini cupcake liners. Add 1 pretzel, sprinkles, then 1 teaspoon of yogurt to each. Gently smooth yogurt so it fills each cup. Add about 1/2 teaspoon Rhubarb Strawberry Fruit Spread to each cup, and top with another 1 teaspoon of yogurt. Smooth to evenly spread the yogurt, and garnish with sprinkles. Cover and place in freezer until solid, (for me it took around 5-6 hours, next time I wold make a day before and freeze overnight.) ENJOY!
