Broccoli Chip Quinoa Salad


Remember when I suggested a few days back to save your broccoli stalks after making Confetti {DETOX} Salad? Well, get ready, because we’re going to use them now in this week’s new salad, Broccoli Chip Quinoa Salad!

If you’re like me, you’ve probably thrown a million of these stalks away. Most people just cut off the florets (“tree-tops”), and discard the rest. Well, start hanging onto it because it’s totally edible!!! Just remove the fibrous outer edge (some people use a peeler, but I find it easier to just cut it off), and work with the softer center.

By the way, those fibrous outer pieces make great chews for the dogs. Our dogs love them (although they don’t last long at all)!

After slicing the center, toss it with a bit of Avocado Oil and Pink Salt Blend, and bake until they start to get crispy. WARNING: you may EAT ALL OF THESE before they ever make it into your salad!!! If that happens, just don’t tell anyone and call it “Carrot and Quinoa Salad”.

We like salty and spicy mixed with sweet, so this suited our palates well. I added a bit of ground red pepper to the quinoa, and then dressed it all with the Blueberry Acai Vinaigrette, and the result was a complex layer of flavors that turned this healthy dish into a DELISH dish!

Josh enjoyed it too, and will take a bowlful to work everyday this week with his lunch to keep him full during his workday. 

Happiness in Broccoli Chip Quinoa Salad

  • Quinoa increases to 4 times its size when cooked, so this recipe gives you 4 cups of quinoa. Each 1 cup cooked provides 8 grams of protein.
  • Broccoli stalks are equally as nutritious as the florets or crowns.
  • Studies have shown that compounds in broccoli modify positive signaling at molecular receptor levels help protect from prostate, colon, urinary bladder, pancreatic, and breast cancers. (source)

  • Blueberry and Acai juice (found in the Vinaigrette) contains lots of antioxidants.
  • Pink Himalayan Salt contains 52 minerals our bodies need.

Broccoli Chip Quinoa Salad

This salad can be served warm or cold. Loaded with flavor, protein and nutrients. This makes a large batch, perfect for a crowd or to keep on hand for lunches or side dishes throughout the week!
Ingredients
  • 1 cup dry quinoa
  • 2 cups water
  • 2 broccoli stalks
  • ½ pound carrots, shredded
  • Avocado Oil
  • Blueberry Acai Viniagrette
  • Pink salt and pepper
  • ground red pepper (optional)
Instructions
  1. Cook quinoa in water as directed on package.
  2. While quinoa is cooking, preheat oven to 450 degrees and line a baking sheet with parchment paper.
  3. Peel or cut hard outer edge of stalks, then slice the remaining center part of stalk into thin "coins".
  4. Toss sliced broccoli with a drizzle of Avocado Oil and a sprinkle of salt and pepper, then place on baking sheet in a single layer, and bake for about 20 minutes, until edges begin to brown.
  5. Combine cooled quinoa, cooked broccoli chips, and carrots in a large bowl. Add a drizzle of Avocado Oil and a drizzle (2-3 tablespoons) of Blueberry Acai Viniagrette. ENJOY!
