Beachy Peachy Icebox Cake

Have you become acquainted with ICEBOX CAKES?They are these layers of yummy sweetness, piled on top of each other, and then placed in the refrigerator until the solid ingredients absorb the moist ingredients, and the moist ingredients absorb the flavors of the dry, and they all come together in one ooey-gooey cool summer treat!I’ve included both a video for this recipe & the written recipe below 🙂
There seems to be only a few rules to a good icebox cake:1. You need cookies. Any kind will do! Sandwich cookies, plain cookies, cookies with nuts or fruits, big cookies, small cookies…get the picture?2. You need whipped topping or real whipped cream. I was going to make mine with real whipped cream (just take heavy whipping cream & start beating), but being short on time I caved to the ease of whipped topping.

3. You are only limited by your own imagination. Simply start with 1 bit of inspiration…your favorite cookie or a special flavor combination idea & then run with it! You can add in any additional fruit, candy, nuts, or anything else you’d like!

My “magical inspiration” for this one was a Peach Drink mix that I had on hand! I wanted to make the drink, but I also wanted a complimentary dessert, so I just pinched a little of the mix before I mixed up the drink and started from there.Standing in the cookie aisle, wondering what would go good with Peach…maybe lemon? blueberry? vanilla wafers?…the possibilities seemed almost endless!
I arrived at coconut bar cookies, and suddenly the “Beachy Peachy” name popped into my head! The rest was truly magical!
RECIPE

1/2 cup Tastefully Simple’s Fuzzy Navel Peach Drink Mix (you can find that HERE)
2 tubs of whipped topping (8 oz each)
2 packages of coconut cookies
1 20 oz can crushed pineapple, drained
1 jar maraschino cherries, drained

Combine drink mix and whipped topping until well blended. Spread a layer of flavored whipped topping on the bottom of a 9X13 cake pan. Add a layer of cookies, crushed pineapples, and cherries. Top with another layer of flavored whipped topping, cookies, pineapple. Cover with remaining flavored whipped topping and garnish with any remaining cookies, crushed into crumbs.
