I never thought I was one for fruit in my salads, but through this 30 Days of Salad experiment I found that mixing a bit of sweet, especially alongside a nice vinegar is a flavor combo that really made my tastebuds HaPpY!

The protein in this salad comes from ground flax seeds, chia seeds, and hemp seeds. Sometimes, it’s hard to do an animal-based protein at every meal, so I have really been interested in finding good quality, real food, protein alternatives.

A bonus side effect of the seeds are that they give a nice crunchy texture to the salad, too!

Since being introduced to it a few months back, I have become a really big fan of using Avocado Oil more often than Olive Oil, because it has a really nice, crisp clean taste. That means the flavor of what you’re eating comes through instead of primarily tasting the oil.

If I do use an Olive Oil I choose a “light-tasting” one, but really, it’s just a matter of personal preference.

  • Spinach,
  • Dried apricots,
  • Craisins,
  • Avocado,
  • Chia seeds,
  • Hemp seeds,
  • Ground flax,
  • Pink salt,
  • Tastefully Simple Strawberry Balsamic Vinegar,
  • TS Avocado Oil.
Instructions
  1. Pile everything into a nice dish.
  2. Grab your fork.
  3. Dig in & ENJOY!
