3 Mini recipes: TINY on size, BIG on flavor!

For my spring kick-off party yesterday, I used 3 of Tastefully Simple’s new products to create some pop-in-your-mouth bite-sized goodies.

They each took but a few minutes to whip up, and all three were huge hits! These Mini recipes were definitely BIG on flavor!

First up was Mini Dreamsicle Cookies. Super simple to make, super hard to NOT eat while you are assembling them!

1 Packet Tastefully Simple’s Orange Dreamsicle Cheese Ball Mix
8oz cream cheese
1 box mini Nilla Wafers

Simply mix the Orange Dreamsicle Cheese Ball mix with an 8oz block of softened cream cheese. Then, spread the mixture on a mini Nilla wafer & top with another cookie. Served right away the cookies stay crisp, if you store in the refrigerator overnight & then serve the cookies will be soft and more of the texture of a “gob”.

Our second “Mini” recipe was Mini Tropical Pound Cake Muffins. I LOVE making our pound cake into mini-muffins because they are just the right size to pop in your mouth! They also freeze nicely, so you can keep them in an airtight container & then just pull a few out at a time to satisfy your sweet tooth. (Because we know that if the WHOLE CAKE is in front of you it *could* disappear in one sitting…just saying!)


Tastefully Simple’s Tropical Pound Cake mix
1 stick melted butter (the box calls for 1 1/2, but I use just 1)
1 cup water

Preheat oven to 350 degrees. Mix all ingredients in a medium bowl until combine. Spoon into mini muffin tins sprayed with non-stick cooking spray. Bake at 350 for 12-15 minutes, until muffins start to turn light brown at edges.

The third “Mini” recipe was Mini Sweet and Smoky BBQ Saltines. I had made this recipe last week with full sized Saltines (see it HERE), but this time I used the minis & cut the amount of oil in half. RAVE reviews from everyone, and everyone who tasted both preferred the minis over the full-size.

They were sooooo good that I forgot to snap a pic before they were gone!!!


1 lid-full (2-3 Tablespoons) Tastefully Simple’s Sweet & Smoky BBQ Seasoning
1/2 cup Wesson canola oil
1 box mini Premium Saltines

Mix seasoning and oil. Place crackers in a large plastic or glass container with lid, and pour oil mixture over crackers (keep stirring while pouring so it doesn’t settle out). Seal container with lid, give it a good shake & let sit for 20 minutes. Come back & shake it up again, turn container upside down, and let sit for another 20 minutes. ENJOY!
