I love getting a little creative with basic mixes and finding new ways to use them. As a Tastefully Simple Consultant, I get to play with new food all the time, and most recently we’ve had a yummy new Peanut Butter Quinoa Bar Mix introduced to us.
The good news is, Josh LOVES the bars to take to the YMCA to snack on throughout the day. The 7 grams of protein per bar not only gets him through the workday, but also gives him a boost when working out. The bad news is, I am allergic to peanuts so I can’t enjoy them when made as directed, BUT I did find a few ways to modify the recipe into something yummy that I CAN enjoy!
This weekend, I got a little creative and decided to see if I could create 3 healthy snacks from 1 box of the Quinoa Bar Mix, and I think it went over pretty well! To start, I took 1/2 of the mix and prepared it as directed by adding peanut butter and honey (1/2 of the amounts on the package since I was using 1/2 of the mix.)
This could be prepared as bars as directed, but I choose to roll them into bite-sized balls (above photo) to create Protein Bites. I got 16 bites out of the mix, so 2 of them would contain about 7 grams of protein.

Since that half of the snack batch was suitable for Josh, I decided to use the rest for snacks that I could eat. I took the remaining dry Quinoa Bar Mix and warmed it in a skillet over medium heat, shaking it over the stove until it was toasted nicely.
Next, I dipped dried apricots and dates in a little bit of honey and then dipped them into the toasted mixture. These are delicious little sweet treats, that are perfect when you need a bit of an energy boost. Rather than reaching for candy or cookies in the afternoon, if you need a little boost just reach for these natural energy bites and get the added benefit of protein and fiber!
Finally, I took the remaining toasted Quinoa Bar Mix and used it to sprinkle on a Greek yogurt and fruit parfait! Toasting the mix brings out a nice nutty flavor, and the crunch gave the parfait added texture.
Plus, it just LOOKS like I did something FANCY, doesn’t it?!?!
